Traditional Meat and Tomato Sauce


This tomato sauce contains ground beef and three types of canned tomato products, plus herbs and garlic. It doesn't take hours to cook, but the cooking time will vary depending upon whether the wine is added or not.



Ingredients:

  • 2 Tbs butter
  • 1 large onion chopped
  • 6 cloves garlic, minced
  • 2 lbs ground beef
  • 2 cups chicken stock
  • 2 14.5 oz cans diced tomatoes
  • 2 8 oz. cans tomato sauce
  • 2 6 oz. cans tomato paste
  • 2 cups dry red wine (optional)
  • 1 Tbs dried oregano
  • 2 tsp dried basil
  • 2 tsp dried parsley
  • 2 tsp dried crushed thyme
  • 3 bay leaves

Method

In a large pot melt he butter over medium heat; saute the onions and garlic until translucent. Add the ground beef and brown until cooked all the way through. Add the chicken stock and simmer until reduced by half. Add the tomatoes, tomato sauce, and tomato paste; reduce heat to medium low and simmer for 5 minutes. Add the wine and the dried herbs and simmer for another 10 minutes, or to desired consistency.

Notes: This is a recipe that my mother always made when I was a child. It is very easy to do and makes a large pot of sauce that can be put on your favorite pasta with some freshly grated parmesan. It also works well as a base for lasagna and freezes very well.

Number of servings: Makes approximately 3 quarts of sauce
