Super and Simple Tomato Cream Sauce

This pasta sauce combines canned tomatoes with onion and garlic, herbs, and heavy whipping cream to serve over pasta. The fat in the whipping cream helps to prevent curdling when it's added to the acidic tomatoes.
 

Ingredients

  • 1 large sweet onion, chopped
  • 2 tablespoons of olive oil
  • 1 clove of garlic, finely chopped
  • 1 large can (28 oz.) whole peeled tomatoes
  • 1 1/2 teaspoons salt
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 cup heavy whipping cream
  • Hot cooked linguini or penne pasta

Method

In a large saucepan saute the onion and garlic in the olive oil on medium heat until the onion is translucent, about 5 minutes. Add the tomatoes and their liquid to the pan, breaking up the large chunks with a spoon. Add the salt, oregano, and basil to the tomato mixture and bring to a simmer. Simmer, uncovered, for 20 minutes, allowing the sauce to reduce to desired consistency. Add the cream; simmer for 2 more minutes, and take off the heat. Serve over linguini or penne pasta.
