Spinach and Cheese Calzone

Squares of refrigerated pizza dough are filled with a mixture of frozen spinach, ricotta cheese, garlic and basil, formed into triangles, baked, and topped with a tomato-parmesan sauce.
 

Ingredients

  • 1 Cup lowfat ricotta cheese
  • 1 garlic clove, minced
  • 1 tsp. dried basil leaves
  • 1 egg white
  • 1 9-oz. pkg. Green Giant Frozen Spinach, thawed and well drained
  • 1 10-oz. pkg. Pillsbury Refrigerated Pizza Crust
  • 1 8-oz. can tomato sauce
  • 1 tbsp. grated Parmesan cheese
  • 1/4 tsp. dried oregano leaves

Method

Heat the oven to 400. Spray cookie sheet with nonstick cooking spray. In medium bowl, combine first 4 ingredients; add spinach and blend well. Unroll pizza dough; cut into 6 squares. Spoon about 1/4 Cup of filling onto center of each square. Fold dough diagonally over filling to form triangles; moisten and press to seal edges with fork. Place calzones on spray-coated cookie sheet. Bake calzone at 400 for 10-15 minutes or until crust is deep golden brown. Meanwhile, in small saucepan heat the tomato sauce, parmesan and oregano. Spoon the warm tomato sauce over hot calzones.
