Leeks, garlic and sundried tomatoes are sauteed in olive oil and tossed with pasta--red pepper flakes add a little spice (or a lot).
Chop leeks in thin slivers, and then cut slivers in half. Chop garlic into tiny pieces, saute in olive oil until lightly brown and very tender. Add sundried tomatos to leek and garlic mixture and saute for another 5-7 minutes until tomatoes are tender and soft. Cook pasta according to package. Drain and add to tomato mixture in pan. Cook an additional 5 minutes adding a splash or two of cooking wine. After a few minutes, add red pepper flakes and Parmesan cheese. Cook an additional 1 minute, the more pepper flakes and Parmesan, the better. Serve and enjoy with a nice Talenti Brunello.
