Spicy Chicken Pasta

Pasta combined with chili seasoned chicken, olives, tomatoes and garlic is finished off with a white wine sauce for a light and tasty meal.
 

Ingredients

  • 8 oz farfalle pasta
  • 2 boneless skinless chicken breasts
  • 1 red or green bell pepper, diced
  • 1 red tomato, optional
  • 6 Spanish large green pimento stuffed olives, sliced
  • 1 clove fresh garlic, minced or crushed
  • Ground fresh chili paste
  • 1-2 tbsp plus 1 tsp chili oil
  • Parmesan cheese, grated
  • White wine, Chardonnay or Sauvignon Blanc

Method

Cook pasta according to directions, drain and set aside. Cut chicken into 1 inch squares and move to a bowl. Add chili oil to chicken and toss to marinate then set aside. Heat a large skillet and spray with nonstick spray or olive oil. Add chicken to pan and saute on medium heat until done. Add bell peppers, tomato and garlic then saute until soft. More wine may be needed to keep pan from drying out. Add about half cup wine to mixture and add olives. Sprinkle Parmesan cheese on top to taste. Add cooked pasta to chicken mixture and toss to combine. When everything is hot, serve.
