Spicy Chicken and Pine Nuts

This chicken is great over pasta or whole grain rice. It has both Asian and Italian flavors.
Ingredients
- 1 lb chicken breasts, cut into 1/2 inch chunks
- 1/2 cup pine nuts
- 1 sweet red pepper, diced
- 2 large pods garlic, finely chopped
- 3 tbsp reduced salt soy sauce
- 5 tbsp Marsala or red wine
- 2 tsp cornstarch
- 1/2 tsp red pepper flakes
- Grated Pecorino Romano cheese for serving
- 4 tbsp extra virgin olive oil

Method
In small bowl, thoroughly combine soy sauce, Marsala wine, hot pepper flakes and cornstarch then set aside. In a large frying pan, saute pine nuts in 2 tbsp olive oil until just starting to brown, remove from skillet and set aside. In same pan, saute sweet red pepper and garlic until just starting to caramelize, remove from skillet and set aside. In same pan, add 2 tbsp olive oil and saute chicken until cooked through. Mix in pine nuts, sweet red pepper and garlic with cooked chicken in skillet. Add soy sauce mixture and toss all to coat. Cook over medium heat for another minute until starting to thicken. Sprinkle with grated cheese to serve.
