Spaghetti Sauce

This colorful and chunky meatless sauce is full of chopped up zucchini, summer squash, onions, and green peppers.
Ingredients
- 2 small zuchinni
- 1 small yellow summer squash
- 1 medium onion
- 1 medium green pepper
- 5 to 6 small garlic cloves, minced
- 1 tbsp. olive oil
- 2 15-oz. cans tomato sauce
- 1 6-oz. can tomato paste
- Dried Italian seasoning
- Salt & pepper
- 12 oz. hot cooked spaghetti

Method
For sauce, chop zucchini, summer squash, onion, and green pepper into small pieces. In a large skillet saute vegetables and garlic in hot olive oil until tender. Stir in tomato sauce and paste. Season to taste with Italian seasoning, salt, and pepper. Cover and simmer for 2 hours. Serve sauce over hot cooked spaghetti.
