Shrimp Pesto Pizza

Prepared pesto is spread over an unbaked pizza crust and topped with layers of dried tomatoes, cooked shrimp, and shredded mozzarella cheese, and baked until golden.
 

Ingredients

  • 1 package Pizza Crust Mix
  • 3.5 oz. prepared pesto (I prefer either homemade or Alessi brand)
  • Sun-dried tomatoes in olive oil (I prefer Alessi brand)
  • Pre-cooked medium-size frozen shrimp (15-20), thawed and drained
  • 2 cups shredded mozzarella cheese

Method

Prepare pizza crust according to package directions. Press dough onto a greased pizza pan or cookie sheet. Spread pesto over crust. Cut 3 or 4 sun-dried tomatoes into slices. Scatter evenly on top of the pesto. Next, sprinkle on 1/3 of the mozzarella cheese. Place 1/2 of the shrimp on top of cheese. Sprinkle with another 1/3 of the mozzarella cheese. Add the last of the shrimp and top with the remaining cheese. Bake at 450 for 15 to 20 minutes or until cheese is melted and crust is golden.

 

Notes: Adjust the amount of sun-dried tomatoes, cheese and shrimp to your taste. I like lots of toppings.
