Roasted Figs Stuffed With Ricotta & Mascarpone

Ingredients:
| 6 | Fresh Figs |
| 2 Tbsp | Balsamic Vinegar |
| ¼ cup | Whole Milk Ricotta Cheese |
| ¼ cup | Mascarpone Cheese |
| 1 Tbsp | Sugar or Honey |
| 1 tsp | Lemon Juice |
| 2 Tbsp | Toasted Almond Slices |
Directions:
Preheat oven to 400 degrees F.
1.Remove stems from figs and slice in half lengthwise. Arrange figs on a baking sheet, cut side up. Drizzle the tops with the balsamic vinegar. Place in 400 degree oven and roast until soft about 12-15 minutes. Remove from oven and let cool to room temperature.
2.In a small bowl, mix together the ricotta, mascarpone, sugar, and lemon juice.
3.Place one heaping tablespoon of the cheese mixture on top of each fig. Garnish with toasted almonds.
4.Serve 2 or 3 halves per person or use on a cheese and fruit dessert platter.
Helpful Tips:
If you don't have fresh figs, then try using fresh apricots or plums.
