Roasted Figs Stuffed With Ricotta & Mascarpone

Balsamic glazed, roasted figs stuffed with sweetened ricotta and mascarpone cheeses make an elegant dessert. Serve as is or add to a cheese and fruit dessert platter.

  • Servings: 4-6
  • Prep Time: 10 minutes
  • Cook Time: 20 minutes
  • Total Time: 30 minutes

Ingredients:

6 Fresh Figs
2 Tbsp Balsamic Vinegar
¼ cup Whole Milk Ricotta Cheese
¼ cup Mascarpone Cheese
1 Tbsp Sugar or Honey
1 tsp Lemon Juice
2 Tbsp Toasted Almond Slices

Directions:

Preheat oven to 400 degrees F.

1.Remove stems from figs and slice in half lengthwise. Arrange figs on a baking sheet, cut side up. Drizzle the tops with the balsamic vinegar. Place in 400 degree oven and roast until soft about 12-15 minutes. Remove from oven and let cool to room temperature.

2.In a small bowl, mix together the ricotta, mascarpone, sugar, and lemon juice.

3.Place one heaping tablespoon of the cheese mixture on top of each fig. Garnish with toasted almonds.

4.Serve 2 or 3 halves per person or use on a cheese and fruit dessert platter.

Helpful Tips:

If you don't have fresh figs, then try using fresh apricots or plums.
