Red Clam Sauce For Spaghetti

This crock pot recipe combines tomatoes, tomato paste, canned clams with their liquid, herbs, onion & garlic, and is served over pasta.
 

Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 Tbsp olive oil
  • 2, 7-oz cans minced clams, undrained
  • 1 14-oz can tomatoes, cut up
  • 1 12 oz can tomato paste
  • 1 Tbsp snipped parsley
  • 1 bay leaf
  • 1 tsp sugar
  • 1 tsp dried basil, crumbled
  • 1/2 tsp dried thyme, crushed
  • 1/2 tsp salt
  • Hot cooked spaghetti
 
Method

In skillet cook the onion and garlic slowly in oil until onion is tender, about 8 to 10 minutes. Transfer onion and garlic to crock pot. Stir in undrained clams, undrained tomatoes, tomato paste, snipped parsley, bay leaf, sugar, basil, thyme and salt; mix well. Cover and cook on low heat for 4 hours. Serve over hot cooked spaghetti.

 

Notes: This delicious sauce is made easy in the crock pot with common pantry items--however, it serves up like a gourmet meal. Serve a classical Italian dinner with green salad and Italian dressing, garlic bread and chianti table wine.
