Polenta with Basil

Purchased polenta is sliced, browned in olive oil, then served with spaghetti sauce and grated cheese, garnished with basil.
 

Ingredients

  • 1 tube cooked polenta
  • Extra-virgin olive oil
  • Coarse salt and pepper, to taste
  • 1/2 jar spaghetti sauce
  • Grated queso fresco or fresh Parmigiano-Reggiano cheese
  • 12 leaves fresh basil, shredded

Method

Slice polenta into round slices; sprinkle with salt and pepper. Fry on both sides in skillet with olive oil, for 5-7 minutes until crispy. Meanwhile heat the spaghetti sauce in microwave. Place polenta slices on plate, spoon on spaghetti sauce; add cheese and basil.

 

Notes: I also cook baby portabello mushrooms with this recipe, instead of the polenta.
