Pizzelle are light Italian waffle cookies perfect for Christmas or any time of year.

Ingredients
  • 3 eggs
  • 3/4 cup sugar
  • 1 stick butter
  • 2 tsp vanilla extract
  • 1 tsp lemon zest, optional
  • 1 3/4 cups all purpose flour
  • 2 tsp baking powder
 
Method

Beat eggs and sugar until thick and yellow, 2-3 minutes. Add melted butter, vanilla and lemon zest, then beat until blended. Sift flour and baking powder together. Add half of flour mixture to wet ingredients, mix until blended, then add remaining flour and mix again. Spray pizzelle iron and then heat. Place about 1 tbsp batter on iron and bake until golden brown.
