Pesce Pomodoro

Fish fillets are topped with a tomato sauce & sprinkled with Parmesan then baked, and placed on top of cooked pasta to serve.
 

Ingredients

  • Sauce:
  • 1/2 large onion, chopped
  • 1 bell pepper, chopped
  • 15 or 16 oz can tomato sauce
  • Pinch red pepper
  • 3 celery stalks, chopped
  • Pinch dried oregano
  • Fish:
  • 4 white fish fillets (such as cod)
  • 1 cup grated Parmesan cheese
  • Pasta:
  • 10 oz pasta (as desired)
  • 3 sprigs thyme, chopped
  • 1/4 tsp lime juice
  • 5 cloves garlic, pressed
  • 1/2 large onion, sliced

Method

Sauce: Add all sauce ingredients to saucepan and simmer, covered, about 1/2 hour. Fish: When sauce is done put fish in a baking pan and cover with sauce. Sprinkle 1/2 of the cheese on top and bake at 350 degrees for 45 minutes. Pasta: Boil water in stock pot and add a pinch of kosher salt, lime juice, thyme, onion and garlic. Let boil for 1 minute to season the water, then add pasta. Cook until pasta is done. When fish is done sprinkle on remaining cheese and broil until lightly browned. When pasta and fish are done put pasta on plate and top with a fish fillet and serve.

 

Notes: You may press the garlic directly into the cooking water.
