Crisp bread dough filled with Italian sausage, pepperoni, ham, lots of cheese and veggies--and topped with pizza sauce.
Ingredients
- 2 loaves frozen bread dough, thawed
- 1 lb Italian sausage, browned and drained
- 48 slices pepperoni
- 2 oz deli ham, cut in bite size pieces
- 2 cup mozzarella cheese
- 1/2 cup Parmesan cheese
- 1 cup vegetables (your choice: onions, green pepper, black olive, mushrooms, or a combination of any to equal one cup)
- Nonstick cooking spray
- Vegetable oil
- Olive oil
- 2 10 oz cans pizza sauce

Divide each loaf in half. Lightly knead on floured surface. With oiled fingers, gently flatten dough into an approximately 10" circle. Place 1/4 of Italian sausage on dough. Sprinkle with 1/4 cup mozzarella cheese. Layer 12 pepperoni on cheese. Sprinkle with 1/8 cup Parmesan cheese. Layer 1/2 oz deli ham on cheese. Sprinkle 1/4 cup vegetables followed by 1/4 cup mozzarella cheeese. With oiled fingers, stretch edges of dough up around stuffing ingredients and pinch to seal. Place dough bundle on one of two prepared cookie sheets covered with waxed paper that has been sprayed with nonstick cooking spray, seam side down. Repeat with remaining dough and ingredients. Allow dough to rise and double. Heat oil to 350 degrees in a deep fryer or large dutch oven. Place one dough bundle in hot oil and brown outside of bread, turning over to brown all sides. Drain on paper towels as remaining bundles are fried. Remove wax paper from previously used cookie sheets. Grease pans with olive oil. Place 2 bundles on each sheet and place in a preheated 350 degree oven for 30 minutes. While panzorrati bakes, heat your choice of prepared pizza sauce in a sauce pan. Remove panzorrati from oven and transfer to plate. Drizzle with pizza sauce.
Notes: This dish was served at a family Italian restaurant in my home town. A "secret" recipe brought to the "new world", the ingredients and preparation would not be divulged but my family thinks I've gotten pretty close! This unique Italian dish serves 4 big appetites, or split each in half for those with smaller stomachs.
