Lasagna with Vodka Sauce

Cheesy lasagna layered with a spicy sausage and vodka cream sauce. A great make ahead dish your family and friends will love.
 

Ingredients

  • 2 lbs Italian spicy sausage
  • 1 onion, diced
  • 2 carrots, peeled and diced
  • 4 cloves of garlic, minced
  • 29 oz can tomato sauce
  • 14.5 oz can diced tomatoes
  • 3 Tbsp tomato paste
  • 1/2 tsp pepper
  • 1/4 tsp red pepper flakes
  • 1/2 tsp garlic powder
  • 1 tsp oregano
  • 1/2 cup vodka
  • 1/2 cup cream
  • 1/4 cup parmesan
  • 2 Tbsp fresh basil, chopped
  • Cheese filling:
  • 15 oz ricotta
  • 1/2 cup + 1 1/2 cup mozzarella
  • 1/4 tsp pepper
  • 1 Tbsp fresh parsley, chopped
  • 1 egg
  • 8 oz Neufchatel
  • 1/4 cup parmesan
  • 9 oz box of no boil lasagna noodles
  • 2 cups of fresh spinach

Method

Sauce: Remove sausage from casing. Heat a large stock pot over medium heat and add sausage, onion, carrots and garlic. Saute until sausage is cooked, drain off excess fat, then add tomato sauce, diced tomatoes, paste, pepper, red pepper flakes, garlic powder and oregano. Turn heat to low and simmer for 15 minutes. Add vodka and cream and simmer for 45 minutes. Turn off heat and stir in parmesan and basil. Pre-heat oven to 350 degrees. Prepare cheese filling by mixing ricotta, 1/2 cup mozzarella, pepper, parsley and egg until well blended. Cut Neufchatel cheese into small cubes and fold into cheese mixture. In a 9x13" baking dish spoon a light layer of sauce, then one layer of noodles, half of cheese mixture, 1/2 cup of remaining mozzarella and half of the spinach. Repeat once more and top with a last layer of sauce and sprinkle last 1/2 cup mozzarella and 1/4 cup parmesan. Cover with foil and bake for 45 minutes, uncover and bake an additional 15 minutes.
