Land and Sea Pasta

A spicy mixture of chicken, shrimp and andouille sausage in a rich tomato sauce, served over spaghetti.
Ingredients
- 2 andouille sausages
- 1/2 teaspoon red pepper flakes
- Olive oil
- 1 whole chicken, cut into 8 pieces
- 1/2 pound shrimp
- 1 25 oz can tomato sauce
- 2 cups chicken broth
- 3 cloves garlic
- 1 shallot
- 1 pound spaghetti
- Poultry seasoning
- Cilantro

Mince shallot and cut sausage into thin slices. Saute shallot, sausage, and red pepper flakes for about 1 minute in olive oil, then add garlic for another minute to release flavors. Add tomato sauce and chicken stock to pan with shallot and sausage. Stir and bring up to a boil. Lower heat so sauce is on a slow simmer then add shrimp. Season chicken with poultry seasoning, and add to pot. Let sauce simmer for an hour. After an hour remove chicken from the sauce. Take chicken off bone, and once all meat has been removed, place back in pot with sausage and shrimp. Stir and then allow tosimmer for another 20-30 minutes. During last 20-30 minutes, boil water for pasta. Cook pasta, drain, and place pasta in a bowl. Add sausage, shrimp, chicken and tomato sauce to pasta, combine and finish with a garnish of finely chopped cilantro.
Notes: This goes well with an Italian bread to dip into the spicy tomato sauce.
