Italian Sausage and Fire Roasted Tomato Pasta

Smoked Italian sausage, fire roasted tomatoes, plenty of garlic, fresh mozzarella and basil come together in this tasty pasta dish.
 

Ingredients

  • 5-6 smoked or sweet Italian sausage or turkey links
  • 2 tbsp olive oil
  • 3-4 cloves garlic, minced
  • 1 14 1/2 oz can diced fire-roasted tomatoes, undrained
  • 2-3 fresh roma tomatos, cut into chunks
  • 1/3 cup sun-dried tomato vinaigrette with roasted red pepper
  • 2 cups tricolored rotini pasta, cooked al dente
  • 4 oz fresh mozzarella cheese, cut into 1/2 inch cubes
  • 1/4 cup chopped fresh basil
  • Salt and pepper to taste
 
Method

If sausages have casings, remove before slicing. Otherwise, slice sausage into bite sized pieces. In large skillet, brown sausage in olive oil over medium heat. Remove from heat and drain on paper towels. Add garlic into sausage drippings and saute just until garlic becomes fragrant, being careful not to overcook. Add sausage back to skillet with vinaigrette to coat. Add canned tomatoes and fresh tomatos, then heat just until warm, about 7 minutes, reducing tomato juice just a little. When heated through, stir cooked pasta into skillet. Season with salt and pepper to taste. Remove from heat and sprinkle with fresh mozzarella cubes and fresh basil.
