Hearty Italian Chicken Soup

Diced tomatoes, white beans, pasta and chicken in a savory broth--very healthy.
Ingredients
- 2 14.5 once cans diced tomatoes
- 1 14.5 once can Great Northern Beans
- 7 ounces small shell pasta
- 4 boneless skinless chicken breasts
- 1 small onion, diced
- 2 cloves garlic
- 1 tsp dried basil
- 1 tsp dried oregano
- 2 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped

Method
In a large stock pot cover chicken with water. Add basil, oregano, thyme, salt, and pepper. Bring to a boil and cook until chicken is done. While chicken is boiling saute chopped onions and minced garlic in olive oil until onions are translucent. When chicken is done remove from pot and set aside to cool. Once it is cool enough to handle tear into bite size pieces. Add onions and garlic mixture, tomatoes and beans to the broth. Let simmer 15 minutes. Then add chicken and pasta and cook until pasta is tender. Garnish with chopped parsley.
