Gnocchi with Sweet Potatoes & Sage


Potato gnocchi with sweet potatoes in a sweet apple flavored sauce with garlic and sage. Use homemade gnocchi or purchased for a quick dinner.



Ingredients:

  • 4 cups apple cider
  • 1 pound potato gnocchi
  • 3 Tablespoons extra virgin olive oil
  • 2 cups peeled and diced sweet potato (about 1 medium)
  • 1 Tablespoon minced fresh garlic
  • 2 Tablespoons chiffonade fresh sage, plus 8 to 12 leaves for garnish
  • 2 Tablespoons unsalted butter or butter substitute (I prefer Smart Balance)

Method

Heat apple cider to boiling, reduce to 1 cup, skimming as necessary, and set aside. Prepare gnocchi according to package directions and set aside. Heat olive oil in a large skillet over medium heat. Add the sweet potato and saute for 10 to 12 minutes, until lightly browned and tender, stirring frequently. Stir in the garlic and sage, and saute for 3-4 minutes. Add butter and stir until melted. Stir in reserved gnocchi and apple cider, and heat thoroughly, reducing sauce slightly. Serve garnished with sage leaves.

Notes: I serve this side dish with pesto roasted turkey (pesto rubbed on the turkey flesh, underneath the skin.) Other options for this recipe: Stir in fresh cranberries, or dried cranberries soaked in apple cider, chicken broth or wine, with reserved gnocchi and reduced apple cider, and heat thoroughly. Stir in baby spinach with reserved gnocchi and reduced apple cider, and heat thoroughly. If you prefer a less sweet sauce, substitute chicken broth mixed with a little cornstarch or arrowroot to thicken sauce slightly for the reduced apple cider. Sprinkle finished dish with finely shredded Parmigiano-Reggiano cheese.
