This is something like a rolled up omelet. Parmesan and seasoned bread crumbs add flavor.
 

Ingredients

  • Cooking oil
  • 6 large eggs
  • 1/2 cup Parmesan Reggiano cheese (grated)
  • 1 cup Italian-flavored bread crumbs
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • shredded mozzarella (optional)

Method

In a large non-stick skillet, heat 2 tablespoons of oil while mixing ingredients. In large mixing bowl, beat 6 eggs, then add Parmesan cheese, bread crumbs, salt and pepper. Mixture will be thick. Pour mixture into skillet (it will look like you are making an omelet). Start pushing from front to back the wet egg mixture away from you towards opposite end of skillet. The cooked portion will remain. When you have mostly cooked egg, roll like a jelly roll, while pushing the wet away from the dry, rolling tightly as you go. The bottom portion will get deep golden brown. If you want to add ham or mozzarella, you can add to the dry portion as you roll. When you are finished, you will have an Italian egg roll, which you slice thinly, and serve with crispy Italian bread, and a tomato salad.

 

Notes: This is a great meatless dinner or great for a night when you want something light, but flavorful. It is also a great appetizer for BBQ's.
