Fra Diavolo Chili

A flavorful Bolognese sauce adds a great flavor to this veggie packed chili. Onion, eggplant and carrot along with plenty of seasoning what a chili.
Ingredients
- 2 pounds ground beef chuck
- 2 28 ounce jars Bolognese sauce
- 1 6 ounce can tomato paste
- 1 large yellow onion, chopped
- 1 cup chopped finely carrots
- 1 fresh red chili pepper, seeded and chopped
- 3 cups chopped eggplant
- 1 cup sliced mushroom
- 1 tablespoon minced garlic
- 2 teaspoons ground cumin
- 2 tablespoon fresh chopped basil
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon sugar
- Fresh shredded mozzarella to taste

Method
Heat a large stock pot over medium high heat. Crumble ground beef and cook until evenly browned then drain. Pour in Bolognese sauce and tomato paste. Add onion, eggplant and red chili pepper. Season with chili powder, garlic, cumin, basil, salt, pepper, paprika and sugar. Stir to blend, then cover and simmer over low heat, at least 2 hours, stirring occasionally. Top with mozzarella.
