Feta Artichoke Pasta Salad

This Italian themed pasta salad is perfect for a warm summer night or in addition to most meals.
 

Ingredients

  • 1 small package of feta cheese
  • 1 pound package of mostaccioli noodles
  • Fresh red and green pepper, diced
  • 2 medium tomatoes, diced
  • 1 small jar of marinated artichokes Parmesan cheese
  • 1 red onion, diced
  • 2 tbsp Italian seasoning
  • 1 package of dry ranch dressing
  • Olive oil

Method

Cook pasta till tender and cool with cold water. Coat pasta lightly with olive oil. Add ranch dressing mix and stir gently. Add diced tomatoes, red pepper, green pepper, and red onion. Next, add whole jar of marinated artichokes. Then, add feta cheese. Add Italian seasoning. Gently stir again and add Parmesan cheese. Optional: add diced cold chicken, shrimp, or crab.

 

Notes: If pasta gets too dry, add more olive oil.
