Easy Baked Ziti

Ziti pasta is cooked and combined with a sauce made of onion, herbs and canned tomatoes. This meatless mixture is baked in a rectangular dish, topped with a generous amount of shredded mozzarella cheese.
 

Ingredients

  • 1 lb ziti
  • 1/2 cup onion, chopped
  • 1 clove garlic, crushed
  • 2 tablespoons olive oil
  • 2 tablespoons fresh basil and parsley, chopped
  • 1/2 teaspoon of each of the following: dried oregano, thyme, & rosemary
  • 1 (20 oz.) can diced tomatoes
  • 3 1/2 cups shredded mozzarella cheese
  • Salt and pepper, to taste

Method

Fill a large pot with water and a pinch of salt. Bring to a boil; add ziti and cook about 20 minutes (pasta should be al dente.) Drain and set aside. Meanwhile, in a medium saucepan, cook onion and garlic in oil on medium heat about 5 minutes, stirring occasionally. Add herbs; cook 1 more minute, stirring frequently. Add tomatoes; bring to a boil; cover, reduce heat and simmer 10-15 minutes. Place pasta in a 9x13 inch baking dish and pour tomato sauce over; mix well. Top with cheese and bake, uncovered, 30-35 minutes or until cheese is lightly browned.
