Creamy Chicken and Tomato Spaghetti

This easy chicken and pasta dish is a snap to put together and fulfills the vegetable, protein, and flavor portions of dinner.
Ingredients
- 2 tablespoons cooking oil
- 1 lb skinless, boneless chicken breasts, sliced into strips
- nonstick cooking spray
- 2 zucchini, sliced thinly
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 14 oz cans diced tomatoes
- 1 8 oz package cream cheese
- 1 lb spaghetti, cooked according to package directions
- 1/2 cup shredded Parmesan cheese

Method
Heat oil in a large skillet on medium high. Cook chicken 6 minutes on each side, until cooked through. Spray cooking spray into skillet; add sliced zucchini, salt and pepper. Cook until zucchini has browned slightly on each side. In a medium pot, bring diced tomatoes to a rapid boil, add cream cheese. Stir mixture until cream cheese has completely melted. Once zucchini has browned, toss them into sauce mixture and mix lightly. Assemble by placing pasta first, then chicken, then sauce mixture, and Parmesan cheese.
