Cheesy Italian Shrimp & Pasta

Campanelle pasta (shaped like a bell flower) is suggested here. It's cooked in tomato sauce with seasonings, and combined with shrimp, & three cheeses.
 

Ingredients

  • 1 Tbsp. Olive Oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, chopped
  • 1 4-oz can mushroom pieces, drained
  • 2 14-oz cans chicken broth
  • Dash pepper
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 3/4 cup uncooked campanelle pasta (or your favorite pasta)
  • 1 cup tomato sauce (Homemade or store bought)
  • 24 frozen cooked medium shrimp, thawed & tails removed.
  • 1 cup crumbled Feta Cheese
  • 1/2 cup pecorino-romano cheese
  • 1 cup shredded mozzarella

Method

Heat olive oil in large skillet. Add onion and saute 4 minutes. Add Garlic & mushrooms; saute 5 minutes. Add broth and seasonings. Bring to simmer. Add uncooked pasta. Cook for 12 minutes. Add tomato sauce. Cook 10 minutes longer. Add shrimp, Feta cheese, pecorino-romano cheese and mozzarella. Stir well. Simmer till heated thru, about 5 minutes.

 

Notes: Serve with salad and a crusty loaf of Garlic bread.
