Bordeaux Spaghetti Sauce

This meatless spaghetti sauce recipe combines onion, green pepper and garlic with canned tomatoes. Oregano, basil, rosemary and margoram flavor the homemade sauce, as does red wine, Tabasco and pepper.
 

Ingredients

  • 1 small onion
  • 1 small green pepper
  • 2 large garlic cloves
  • 4 tbsp. olive oil
  • 1 28 oz. can crushed peeled tomatoes
  • 1 tbsp. oregano
  • 1 tsp. sweet basil
  • 1/2 tsp. rosemary
  • 1/4 tsp. marjoram
  • 1/2 cup dry Bordeaux red wine
  • 2 sprinkles of hot red pepper sauce Black pepper

Method

Finely chop the onion and green pepper and crush the garlic. In saucepan saute in oil until onion and pepper are soft. Pour tomatoes into saucepan and add all other ingredients. Bring to a low boil and simmer, uncovered, for 45 minutes, or to desired consistency. For 2 people, cook 1/4 pound of spaghetti according to directions. Test spaghetti for doneness before you finish cooking. After draining spaghetti, rinse it with cold water in the colander to prevent sticking. Spoon spaghetti sauce over spaghetti. Serve with grated parmesan.
