This baked pasta dish if full of fresh veggies and fresh herbs to make it a full of flavor dish. Topped with melted cheese this dinner can't be beat.

Preheat oven to 350 degrees. Bake in 9 x 13 pan and 8 x 8 pan. Boil pasta for about 7-8 minutes, until it reaches al dente and drain. Saute onions, garlic and mushrooms in olive oil. Add pasta sauce, red wine, sugar and oregano to vegetables after they have cooked through. Heat sauce mixture until it's hot. Pour cooked pasta into large pot with pasta sauce and vegetables. Add raw spinach to hot pasta mixture and stir in gently to combine. Add salt and pepper at this stage if desired. Pour pasta into 2 pans and cover with mixture of two cheeses. Bake 30-40 minutes.
I like to make this recipe with some of the new high fiber pastas. It's more nutritious and lower in calories. This recipe freezes well before baking. It's one of our family favorites.
