These hot appetizer meatballs make a great dipper with marinara or alfredo sauce.
In large mixing bowl, mix all the meat, eggs, bread crumbs and shredded cheese together and set aside.
In a small skillet, add 1 tbsp olive oil, brown onion and garlic for 5 minutes.
Add 1/2 the can of tomatos and simmer for 5 minutes.
Let cool to room temperature.
Preheat oven to 350 degrees.
Combine vegetable mix with meat mixture.
Wipe a baking sheet with 1 tsp oil.
Form meatballs in palm of hand, about 1/2 cup.
Once all the meat balls are ready, drizzle with remaining olive oil and bake for 30 minutes.
Notes:
Serve with spaghetti, add tomato sauce or white sauce.
Also makes killer meatball hoagies.
